Weekend Wrap Up...

Hi Friends! 
How was your weekend??
Did your team win?

I am just going to go ahead and complain about this and get it out of the way! 
REALLY???
I mean I cant take much more-I didnt sign up to live in Alaska (Oh, wait... I better not saw that- remember last time)! I am SSSOOOO OVER the cold but I have a feeling we havent seen nothing yet! UGH....
Ok I am done complaining...for now! 

Did you watch the Commercials Super Bowl?
I actually did and I found myself getting all into the game this year! 
Between tweeting and watching the game I couldn't keep up!

They are both from CookingLight.com and they are YUM!

Chicken and Wild Rice Soup


Ingredients

  • 1  cup  uncooked quick-cooking wild rice
  • Cooking spray
  • 1  cup  chopped onion
  • 2  garlic cloves, minced
  • 3  cups  fat-free, less-sodium chicken broth
  • 1 1/2  cups  cubed peeled baking potato
  • 3  cups  2% reduced-fat milk
  • 1/3  cup  all-purpose flour
  • 10  ounce  light processed cheese, cubed (such as Velveeta Light)
  • 2  cups  chopped roasted skinless, boneless chicken breasts (about 2 breasts)
  • 1/2  teaspoon  freshly ground black pepper
  • 1/4  teaspoon  salt
  • 1/4  cup  chopped fresh parsley (optional)

Preparation

Cook rice according to package directions, omitting salt and fat.
Heat a large Dutch oven over medium-high heat. Coat pan with cooking spray. Add onion and garlic; sauté 3 minutes. Add broth and potato; bring to a boil over medium-high heat. Cover, reduce heat, and simmer 5 minutes or until potato is tender.
Combine milk and flour, stirring well with a whisk. Add the milk mixture to potato mixture; cook 5 minutes or until slightly thick, stirring constantly. Remove from heat; add cheese, stirring until cheese melts. Stir in rice, chicken, pepper, and salt. Garnish with parsley, if desired.


Three-Cheese Chicken Penne Florentine


Ingredients

  • 1  teaspoon  olive oil
  • Cooking spray
  • 3  cups  thinly sliced mushrooms
  • 1  cup  chopped onion
  • 1  cup  chopped red bell pepper
  • 3  cups  chopped fresh spinach
  • 1  tablespoon  chopped fresh oregano
  • 1/4  teaspoon  freshly ground black pepper
  • 1  (16-ounce) carton 2% low-fat cottage cheese
  • 4  cups  hot cooked penne (about 8 ounces uncooked tube-shaped pasta)
  • 2  cups  shredded roasted skinless, boneless chicken breast
  • 1  cup  (4 ounces) shredded reduced-fat sharp cheddar cheese, divided
  • 1/2  cup  (2 ounces) grated fresh Parmesan cheese, divided
  • 1/2  cup  2% reduced-fat milk
  • 1  (10 3/4-ounce) can condensed reduced-fat, reduced-sodium cream of chicken soup, undiluted

Preparation

Preheat oven to 425°.
Heat olive oil in a large nonstick skillet coated with cooking spray over medium-high heat. Add mushrooms, onion, and bell pepper; sauté 4 minutes or until tender. Add spinach, oregano, and black pepper; sauté 3 minutes or just until spinach wilts.
Place cottage cheese in a food processor; process until very smooth. Combine spinach mixture, cottage cheese, pasta, chicken, 3/4 cup cheddar cheese, 1/4 cup Parmesan cheese, milk, and soup in a large bowl. Spoon mixture into a 2-quart baking dish coated with cooking spray. Sprinkle with remaining 1/4 cup cheddar cheese and remaining 1/4 cup Parmesan cheese. Bake at 425° for 25 minutes or until lightly browned and bubbly.

The Darth Vader was my favorite too. Didn't care for the Halftime show. Not looking forward to this winter weather either. Ready for Summer. Just think 5 months and we will be in the midst of 90 weather. Oh the joy.
